Did you know we use local hops in our flagship IPA, Baraboobian? We often use them in other specialty brews, too!
Just 26 miles from our brewery and taproom in Baraboo, Wisconsin, is a local hop farm Pardeeville Wisconsin named Hoppy Swans Hops.
We have had the privilege of working with the Swan family, and using their Cascade, Nugget, and Mt. Hood hops in various recipes.
Our flagship IPA is called Baraboobian West Coast IPA. Dry hopped with Cascade hops from Hoppy Swans Hops, Baraboobian is both citrus and pine forward.
Last month, we were able to help harvest and process Hoppy Swans hops, and learned more about their process. Growing and harvesting hops is a labor of love!

After helping Hoppy Swans on harvest day, we were fortunate to be able to take freshly picked whole cone Cascade hops with us, and brew a “wet hop” beer, called Dressage Wet Hop Belgian IPA.
“Wet hops” are hops that are used while fresh and moist. They quickly degrade, so it is important to brew as quickly as possible after picking them.

Dressage Wet Hop Belgian IPA has citrus, pine, and floral hop notes with a spicy, grassy aroma from the hops and yeast. It has a unique fresh hop character from the freshly picked whole cone Cascade hops.
